What We’re Eating

Kalaya, Philadelphia
At Kalaya, every dish tells a story of heritage, memory, and place. Chef Nok Suntaranon draws from the recipes of her upbringing in Southern Thailand, bringing deeply personal flavors and time-honored traditions to the heart of Philadelphia. The menu celebrates the complexity and vibrancy of Southern Thai cuisine, balancing spice, texture, and aroma in dishes designed to be shared and savored together.
Located in Fishtown, Kalaya has become one of the city's most celebrated dining destinations, recognized for its unwavering commitment to authenticity and innovation. In 2026, the restaurant earned the James Beard Award for Outstanding Restaurant, one of the culinary industry's highest honors. The acclaimed Thai restaurant prevailed over competitors from across the country, solidifying its reputation as a national dining destination. The award marked Kalaya's fourth James Beard nomination, while Chef Nok Suntaranon previously won Best Chef: Mid-Atlantic in 2023. Kalaya also received Michelin recognition in 2024, and Suntaranon was named North America's Best Female Chef.

What We’re Obsessing Over
Learning a Tactile Craft
There is something subversive about choosing to work with your hands in a life organized almost entirely around screens. Ceramics, painting, ikebana, bookbinding or guitar, the specific discipline matters less than the quality of attention it demands: both hands engaged, eyes focused on something physical and immediate, the mind absorbed in a way that passive consumption simply cannot replicate.
The neuroscience behind this is worth knowing. Bilateral hand movement activates both hemispheres simultaneously, a state associated with reduced amygdala reactivity and measurably lower cortisol output. Tactile focus, such as the sensation of clay, of a brush loaded with pigment, of paper folding cleanly along a scored line, anchors attention in the body rather than the mind, producing a meditative state that many people find more accessible than seated meditation. Studies tracking cortisol levels before and after craft sessions consistently show reductions comparable to those achieved through yoga or breathwork.
The ritual dimension is its own reward. A weekly ceramics class, a Sunday morning at the piano, an hour spent arranging stems, these practices accumulate into something that genuinely changes how the week feels. We think of it as the most analogue luxury available, and one of the most underrated.
