What We’re Eating

Wine braised short ribs with horseradish & parmesan mashed potatoes

Whether you’re hosting or cooking for two, this is an easy recipe that still provides that wow factor!

Recipe:


Sear:
Season short ribs generously with salt and pepper. Sear in a Dutch oven with oil until deeply browned on all sides and set aside.
Braise:
In the same pot, sauté onion, carrot, celery and garlic until softened. Stir in tomato paste and cook briefly. Deglaze with about 2 cups red wine, scraping up the fond, then add beef stock, thyme, rosemary and a bay leaf. Return ribs, cover, and braise at 325°F for 2½–3 hours, until fork-tender.
Potatoes:
Boil peeled potatoes until tender. Mash with butter and warm cream. Then fold in horseradish and finely grated Parmesan. Season to taste and garnish with fresh chives.
Finish:
Skim and reduce the braising liquid if desired. Plate the short ribs over the horseradish-Parmesan mash, spooning the savory wine sauce over top.
